PRODUCTION

This area enjoys long summers and proximity to the Mediterranean Sea, ideal conditions that favor the growth of trees, which greatly benefit from the ample sunlight and maritime breeze.
Our olives are harvested in October, when they are still green and at their ripest, thanks to the traditional picking methods that we use to guarantee their quality.
After harvesting, the olives are transported to an olive mill, where they are put through a cold mechanical press to extract the juice, preserving all their organoleptic and health characteristics.
Producing olive oil is a labor-intensive job and, unfortunately, few farmers are willing to use these traditional methods. However, our commitment to respecting age-old techniques and guaranteeing a high-quality product has translated into recognition from our satisfied customers.
As of October 2025, we can also boast the DOP certification, further confirming our attention to the quality and provenance of our olives.

OUR OIL

The oil obtained from the pressing of our olives generally presents a color that can vary from yellow to intense green and has a very low acidity, which consistently stays below 0.5%.
To the nose, the extra virgin olive oil for sale is characterized by a medium-intensity olive fruitiness, enriched by notes of almond, green tomato, cut grass, artichoke and, occasionally, aromatic herbs. The flavor is slightly bitter, slightly spicy, and is also distinguished by a delicate sweet note similar to a dessert.
We sell it in 1, 5, and 25-liter cans. The cans are excellent for shipping and for storing the oil. Upon request, we offer glass bottles of various sizes.

PICKLED OLIVES

The Nocellara cultivar produces the most sought-after Sicilian olives. Handpicked between September and October, they boast a firm pulp, intense flavor, and a bright green color that fades to yellow over time.
We market them in brine in 250, 500 and 1000 gram bags.
We also offer olives seasoned with dry herbs, extra virgin olive oil, and apple vinegar, as well as black olives baked solely with extra virgin olive oil.
The traditional processing method involves a slow de-bittering process, ensuring a bold and natural flavor.

OLIVE PATE

Our delicious pâtés are perfect for any occasion.
  • Nocellara green olive pâté (180 g): enriched with Nocellara extra virgin olive oil, chili and garlic, giving it a sweet and light flavor. Its soft texture and delicate taste make it perfect for tasty and quick snacks.
  • Nocellara baked black olive pâté (180 g): prepared with olives and extra virgin olive oil, it has a determined and intense taste, ideal to spread on croutons or to use in appetizers in general for an authentic touch of flavor.

We offer a wide selection of high-quality packaged or bottled wines, available in white, red, and rose varieties. Our production is the result of meticulous attention and care, using grapes from the best vineyards in the area.
